Ingredients
  

  • Boneless, skinless chicken breasts (4, approx. 6 oz each)
  • Ripe tomatoes (4 medium, diced small)
  • Garlic cloves (3, finely minced)
  • Fresh basil (1/4 cup, chopped)
  • Extra virgin olive oil (2 tablespoons)
  • Balsamic glaze (1 tablespoon, optional)
  • Dried oregano (1/2 teaspoon)
  • Salt (to taste)
  • Black pepper (to taste)
  • Fresh mozzarella cheese (8 oz, shredded or thinly sliced)

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pound chicken breasts to 3/4-inch thickness. Season with salt, pepper, and oregano.
  3. In a bowl, combine diced tomatoes, minced garlic, chopped basil, 1 tablespoon olive oil, and salt. Mix gently.
  4. Spoon the bruschetta mixture evenly over chicken breasts. Top each with shredded mozzarella cheese.
  5. Bake for 25-30 minutes, until chicken is fully cooked and cheese is golden and bubbly. Optionally drizzle with balsamic glaze before serving.

Notes

Serve with pasta or a green salad for a complete meal
Mozzarella can be substituted with a mild, meltable cheese if unavailable
Fresh oregano can be used in place of dried
Chicken can be cooked at 375°F (190°C) for 35 minutes for a slower, juicier result
