Method
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Pound chicken breasts to 3/4-inch thickness. Season with salt, pepper, and oregano.
- In a bowl, combine diced tomatoes, minced garlic, chopped basil, 1 tablespoon olive oil, and salt. Mix gently.
- Spoon the bruschetta mixture evenly over chicken breasts. Top each with shredded mozzarella cheese.
- Bake for 25-30 minutes, until chicken is fully cooked and cheese is golden and bubbly. Optionally drizzle with balsamic glaze before serving.
